The Sawridge Inn and Conference Centre (Peace River) is currently accepting applications for the role of Executive Chef. Reporting to the Assistant General Manager, the Chef will ensure guest comfort and satisfaction by delivering unequalled standards of service and value while maintaining efficient and profitable kitchen facilities.
The Executive Chef will understand the true meaning of customer service excellence and possess a superior work ethic enabling him/her to be a positive and effective team leader. The successful candidate will possess some or all of the following characteristics:
•Minimum 5-10 years cooking experience in all areas of culinary field, including 2 years at Sous Chef Level
•Red Seal Certification, provincial papers or equivalent supervisory or leadership experience.
•Adaptable, responds quickly to difficult situations.
•Excellent leadership skills, able to promote and maintain positive team environment while delegating tasks.
•Must be innovative, creative, and current in culinary food styles, trends and theme menus.
•Must be detailed oriented, quality conscious and able to handle multiple priorities
•Proven ability to create an environment with team spirit and passion for food.
•Experience in labour relations.
•Food Safe Certification.
•Background/experience in food, menu and labour cost control
•Professional individual with excellent time management skills, attention to detail.
•Flexible availability days, evenings, weekends.
This role provides a forum for the most passionate and skilled Executive Chef to showcase his/her talents for preparing and serving fresh, natural, regional cuisine with the highest standards of food quality and consistency. The Executive Chef must be Red Seal Certified and have a minimum of 10yrs. experience in the cooking profession, 5 yrs. experience as a Chef, and 2 yrs. experience as a team leader. The Executive Chef will be a valuable contributor on the Management Team with hands-on responsibility for inspiring, leading, and mentoring a team of 10-15 cooking professionals. As a Manager, the Executive Chef will add creativity, expertise, and sophistication to our 3 ½ star property that will continue to distinguish our brand name.
•Maintains and create departmental standards with the Assistant General Manager and ensure that they are adhered to.
•Responsible for managing the day-to-day activities of the culinary department. Supervises the Sous Chef and other kitchen team members to achieve compliance in food preparation, presentation and storage to meet levels of quality and cost-effectiveness, consistent with our standards and performance requirements. Maintaining profitability while achieving guest and associate satisfaction.
•Manage maintenance of physical aspects of kitchen facilities, generates work orders, check cleanliness of kitchen equipment, proper rotation of food, and inspects food outlets and banquet rooms for cleanliness. Ensures adequate stock of food items, formalizes recipes, forecasts culinary requirements, orders perishables and stock food items, review forecasts with the Assistant Manager.
•Associate schedules, labour costs guidelines. Consult with sales and catering staff to develop price menus with client specifications and companies profit standards.
•Supervises department & liaises with Human Resources to interviews, selects and orients new team members, apprenticeship training, health and safety standards, special projects, and employee issues.
•Assists the Assistant general Manager in controlling budgeted Food and Labour Cost
