This 108 year old, non-profit organization has an annual operating budget of $54 million dollars and generates revenue through three activity streams: the 15 day annual summer Fair which averages 750,000 guests each year, Playland amusement park which welcomes 375,000 guests annually including Fright Nights, year-round events including concerts, trade shows and film, cultural and community events. What will you do this year?
In your role as a Cook, your primary accountabilities will be to:
Cook and prepare food according to production guidelines and recipes for a variety of catered functions, as well as PNE concession stands
Understand and demonstrate proper operation of standard cooking and kitchen equipment such as gas ranges, ovens, deep fat fryers, steam cookers, meat slicers, dishwashers and other related equipment
Ensure food is stored at the appropriate temperature for the appropriate length of time, following all food safety standards
Ensure that the highest quality of food is served in a timely and effective manner
Cut, trim, and carve meats and poultry for cooking
Ensure use of correct portions when cutting, preparing, and serving items
Maintain a clean and sanitary work station
Control food waste, loss, and usage per standard operating procedures
Maintenance of all walk in coolers including labeling, dating, and rotating all products
Ensure PNE Uniform and Appearance Policy is adhered to at all times
Performs other related duties as required
What else?
Must have a minimum of 1 year of experience cooking in the Food & Beverage industry
Must have successful completion of Grade 12
Post-Secondary education or completion of technical courses related to cooking is considered an asset
Must have a FoofSafe Level 1 Certificate
Previous experience supervising or assisting Prep Cooks is considered an asset
Must possess excellent communication & interpersonal skills in order to establish effective working relationships with staff, guests and clients
Must have a strong understanding and knowledge of methods, materials and tools used in large scale cooking as well as short order cooking
Must be able to follow recipes and safely operate all kitchen equipment
Must be able to prepare and present food in an attractive manner
Must be available to work a variety of shifts on a part-time basis, including weekdays, weekends and evenings
A Red Seal Certification is considered an asset and will yield a higher hourly wage
